Slow Cooker Apple Pie Oatmeal



Would you believe me if I told you that this recipe is easier than opening a packet of instant oatmeal?  Ok, maybe not quite that easy, but it's pretty easy and a heck of a lot healthier.  In fact, this is not only a great recipe for everyone, it's especially wonderful for us 21 day fixers. By the way, if you plan on making this for your kids, make sure you call it Apple Pie Oatmeal, it makes it so much more exciting for them.

1 cup steel cut organic oats
1 1/2 cups unsweetened almond milk
2 1/2 cups water
3 large apples*
1 Tbsp cinnamon
1 tsp vanilla
2 Tbsps chia seeds
2 Tbps honey

*I had a lot of random size and type of apples from a recent trip to an orchard so this is an approximate amount.

Coat the inside of the slow cooker with non stick spray.  Add steel cut oats, milk, water and all remaining ingredients and stir completely.  Cook on low for approximately 5 hours.  Stir about halfway through cooking time.  I would not advise you to set this and leave the house...I found the edges getting a little toasted and had to stir a few more times.  It's a great recipe for a lazy Sunday afternoon when you're relaxing at home.  The whole house smelled amazing! 

I had enough to split it into 2 containers and freeze half for the next week!
